These Brownies are thanks to Delicious Alchemy and their fabulous Brownie Mix I was chuffed to bits to find I’d won Star Baker for Week 4 of their Gluten Free Magic Bake Off #GFMBO with my Black Forest Gateaux Showstopper. My lovely prize was a hamper crammed with Delicious Alchemy goodies including the Brownie Mix.
So why add beetroot? I’ve had three beetroot on my kitchen counter staring at me for days now, pleading me to make them into something scrummy, I’d had several ideas and simply couldn’t decide … so I made them all. Links to my Sticky Toffee Muffins and Chewy Chocolate Cookies to follow soon!
How I adapted the recipe
To make these brownies, I simply followed the instruction on the packet (please see Brownie Mix link above) but instead of adding 100g of butter, I reduced this to 70g of unsalted butter and added 4tbsp of pureed beetroot, just enough to turn the mixture a lovely rich purple and add a sweet depth to the flavour.
To prepare the beetroot, I peeled the raw beetroot, cut into chunks and pureed with a blender. To prevent the beetroot from being too wet I allowed the puree to rest in a sieve to allow the excess juice to run away.
