Who could resist a square of Rocky Road? This is one of those recipes where you can basically go wild and throw pretty much anything sweet and delicious into the bowl stir it up with chocolate and hey-presto your the best mum ever! These really are that simple and my rocky roads are NEVER the same, it’s a fabulous way to use up those straggling odds and ends of ingredients in tiny packets that leap out at you every time you open a cupboard door. Put the pesky little blighters to good use is what I say.
- 200 g Chocolate Dark, Milk, White...your choice
- Packet of Gluten Free Digestive or Cookies
- 50 g Butter
- Mini Marshmallows
- Glace Cherries chopped in half
- Chopped chocolate of a different colour
- Handful of nuts hazelnuts or pecans work lovely
Grab a square brownie tin and spray it with oil, line the bottom with greaseproof paper.
Smash up the biscuits in a bag, leave some pieces bigger to create nibble size lumps.
Melt the chocolate and butter in a large bowl in the microwave. be careful not to burn.
Add all your chosen ingredients to the melted chocolate mixing with a wooden spoon until all ingredients are bathing in chocolate!
Plop into the brownie tin and smooth the lumpy mixture down as much as possible but don;t feel you need to have a perfect finish.
Pop into the fridge to cool for an hour.
Remove and cut into 9, then halve each square to make 18 rectangles...or keep it at 9 if you think your up for the challenge!
