This idea for a fruit loaf came to me whilst eating the Delicious Alchemy White Loaf that I’d made recently. Don’t get me wrong, the white loaf was delicious and exceeded my expectation but a little thought popped into my head ‘I bet this would make the base for a really good fruit loaf’.
I’m quite partial to orange popping up in lots of baking, I love orange and dark chocolate (Brainwave! Orange and Choc Chip coming up next!) Erm, where was I? Oh yes, orange shortbread, orange cake, orange bread pudding (yes, all these recipes are on here for free) so why not an orange loaf too?
The hard work was done for me already, I had a packet of Delicious Alchemy White Bread Mix, all I needed to do was add a few bits!
I used green raisins in this recipe, why? because that’s what was in my cupboard. This would work equally well with sultanas or a bag of mixed fruit with fruit peel.
- 1 packet Delicious Alchemy White Bread Mix
- zest of 2 oranges
- 80 g raisins soak for 30mins in hot water
- 125 ml orange juice
- 200 ml warm water
- 2 tbsp sunflour oil
- 1 tbsp caster sugar
- 1 heaped tbsp marmalade
Empty the packet mix into a mixing bowl, add the water and oil and mix to combine
Now add the orange juice, zest and raisins, if you have a mixer use the dough paddle for this bit.
Mix the dough for 2-3 mins.
Plop the dough into a well prepared 2lb loaf tin, using a wet spatula smooth down the sides and top of the loaf.
Leave to prove in a warm place for 40mins, I cover mine with a greased piece of cling film and leave on the window sill on a warm day.
Pop into a cold oven and bake on 190C/Gas 5 for 90mins
Remove when cooked and set aside to cool a little.
Before completely cool brush with the marmalade to add a delicious glaze to the loaf.
