I recently got the chance to review these Dark Chocolate Ganache Cupcakes from a local free from baker Maggie and to be blunt; aren’t I the cat that got the cream! I’ve got a really cheesy grin on my face whilst I type this up, why? because I love my blog and the things I get to do and eating Dark Chocolate Ganache Cupcakes for breakfast following a photoshoot is most certainly a perk of the blog! Maggie at Bake It Free From® began her journey into free from baking due to one of her sons allergy to milk, but her mission to bake even more free from, covering more allergies and intolerance, developed into a self-set challenge;

It has taken me nearly two years to develop my range of kits and ensure that the cakes are as good as I think they can be. My aim was for people not to notice the difference from ‘normal’ cakes.  I’m very happy with my range of allergen free cakes and hope that you will be too.

This I can totally relate to, I love a challenge and if someone tells me it simply can’t be done I go out of my way to prove them wrong. Thank goodness for Maggie’s determination, because without it I would not have had the opportunity to eat one (ahem…maybe more) of her delicious Dark Chocolate Ganache Cupcakes. That cheesy grin I told you about was down to the fact that these are flipping impressive. I mean, really, really good.

Now Maggie doesn’t just make these divine cupcakes, Bake It Free From® primarily makes cake making kits. These cost a wee bit more than your average supermarket kit but they make excellent gifts and after seeing a thread on a Coeliac Facebook page recently, about how disappointed people were at shop bought kits, I am confident to say that if any of the kits turn out half as good as these cupcakes…even with the worst cook in the world in the driving seat of production…you will not be disappointed! I unboxed these on Instagram and was taken back by the powerful smells of chocolate filling the room. [to see the full unboxing video click the right cursor to see all 5 clips] Sadly Royal Mail had ignored Maggie’s polite note to keep the box upright and the chocolate ganache didn’t reach me in it’s former beauty. Not that I was concerned, the taste made up for it, but if sending these as a gift, such as a delicious Valentine’s present, you’d want your loved one to have beautiful ganache roses adorning each cupcake BUT! Fear not, I’ve fed back to Maggie and that issue will be resolved.

As you can see from my photo’s the cupcakes still look gorgeous but enough about what they LOOKED like, what did they actually TASTE like! I didn’t see the ingredients list until after trying them so I knew there was a certain something extra but couldn’t quite put my finger on it. I even wondered if there was a wee bit of alcohol in there (wouldn’t have said no if there was….mmmm alcohol cupcakes for breakfast!!) There I go again! Stay focused Rebecca!

The ingredient I could taste was actually coconut milk. Now I mention this because I know some people are not overly keen on coconut flavours (I can think of one lovely lady in particular – love you!) but like I said, I couldn’t quite put my finger on it so I’d say it’s there, but not obviously!

I received the parcel on the Friday but life was super hectic and I wanted to give these cupcakes my undivided attention so I actually filmed unboxing these on the Sunday. The cupcakes were so light and moist not a dry crumb to be seen! The ganache was smooth, rich and the perfect soft consistency to bite into and not destroy the cupcake in the process. Each bite had just the right amount of ganache (I’m actually not a huge icing fan and find chocolate is often too sickly for me) but this wasn’t setting off any ‘blurgh-too-sickly’ alarms … I mean come on! I ACTUALLY ate one for my breakfast after doing the photo shoot, okay it was about 10am by then but still!

Oh! and if you’re wondering, the rest of the family got a look in too and all four of us agreed these were the best free from cakes we’d eaten. Little pouty bottom lip moment for me, oh well, guess Maggie’s my inspiration from now on! Must-do-better Rebecca!
