Lewis has been wanting to make Gingerbread Men since Christmas, this weekend we finally got around to doing it, but there was a catch. Lewis didn’t want the Gingerbread Men to be made of Gingerbread! Ah!

So I had a little think on it over a cup of tea and decided to make Gluten Free Chocolatebread Men instead! True to form I lost my little helper quite soon into the cooking process (he prefers to weigh ingredients precisely and then disappear). I’m quite happy with how these turned out, a word of warning though, these cookies go a bit soft the next day so I’m afraid you’ll have to eat them all up on the first day (shame) unless you don’t mind a more cake-like biscuit thereafter.

350g plain GF flour
200g butter
200g light brown sugar
1 egg
4 tbsp cocoa powder

  1. Cream the butter and sugar together until pale in colour, then add the egg and beat.Chocolate-bread man 2
  2. Add the cocoa and mix, followed by the flourChocolate-bread man 2
  3. The mixture will come together to form a very soft dough, tip out onto work surface and carefully knead then form a ballChocolate-bread man dough
  4. Chill in the refrigerator for at least an hour … I cheated and popped mine into the freezer for 30 mins!
  5. After the dough has chilled it will be much harder and easier to roll, work quickly though because the dough will soften quickly as it warms back up to room temperature. We’ve got these cute little Gingerbread Men cutters so it’s difficult to give an approx on how many this dough will make but to give you an idea we got 2x daddy, 6x mummy and 12x children sizes!Gingerbread Man Cutters

  6. I baked these for 14 mins in a preheated oven on 190C/375F/Gas 5, I use silicone baking sheet covers which are excellent, better than excellent … fabulous, just remember to allow them to cool for 10 mins before transferring them to a cooling rack … don’t be impatient like me and end up with a headless mummy!
  7. After all the cookies had cooled completely and the family had eaten their Sunday dinner, I decided to draft in some help with the decorating and created a production line, hubby took his roll very seriously and decorated a footballer (not too sure about the e-cig in his mouth and can’t work out the team, but it kept him happy for a while!)Glutarama production line!
    Chocolate-bread Footballer!
