If you follow me on Instagram you may have seen some of my stories relating to the October Lottie’s Bake Box. Marianne who founded Lottie’s Bakehouse kindly sent me a box to try…it was so good, I bought the November box too!

What on earth are you; Rebecca, doing getting a bake box when you practically bake in your sleep and must have cake coming out of your ears?

What’s that I hear you say? Cake coming out of my ears?

THAT’S exactly the problem here! When I bake for my blog, I don’t just shove ingredients into a bowl, hope for the best and then write a post in the hope that it will work for you. I bake and re-bake, then bake some more. I GIVE CAKE AWAY because I’m often sick of the sight of it!

Okay, so what the hecky-thump has this got to do with Lottie’s Bake Box then Rebecca?

I’m glad you ask. It’s the very fact that when I bake, I have a cake at the end of it, lots of cake. I often wish I could be bothered to make mini versions of my cakes so that I could have a slice here, a square there, a mini loaf slathered in butter.

I’ve had two months’ worth of boxes now and can tell you that the October bakes lasted very well indeed. Bethany and I had whatever took our fancy in the first week then life happened and we had a few days with no Lottie’s Bake Box bakes only to remember we had half the bakes left…and they were still fresh as they day they were baked and unspoiled. Impressive I think you’ll agree, as when it comes to gluten free, bakes often resemble paper weights after too long!

As I am dairy and egg intolerant I was (kind of) sensible and kept to bakes I knew I could eat (I may have nibbled them all actually, purely for research purposes) and can lick my lips and say every bake is as good as the last…although the ginger biscuits have, and always will be my favourites, they pack a spicy punch – and I LIKE it!
