Right! before we go any further I’d like to apologise for the vegans out there for my choice of filling for these dairy, egg and gluten free tortillas, I stuffed mine full of chicken (sorry). You see I’m not Vegan, I do eat meat…although not that much, if anything I could easily become Pescetarian. What I cannot eat is dairy and egg (among other things) so while I continue to cook for my family all the gluten free dishes we’ve grown accustomed to, I stuck my bottom lip out in full blown sulky-pout mode and said ‘it’s not fair, I want tortillas, I want pancakes, I want….etc, etc.
There is an online company called Foodamentalists who make squillions (okay I exaggerate, but it is a lot) of ready made mixes, things you may not normally find in the stores. I bought my mixes from Foods You Can, who have excellent customer service and a Director who is possibly the kindest person I’ve ever met. Insidentally I also reviewed the Doughnut Mix from Foodamentalists on this blog too you can see the results here.
125g Tortilla Mix
2 eggs (2tsp chia seeds in 60ml water)
100ml cold water
Combine all the ingredients and leave for 30mins in the fridge….that’s it!
To cook your tortillas
Heat a frying pan. I added a spray of oil but to be honest, it’s not necessary and you can dry-fry.
pour a ladle of mixture (size of a drinks coaster) into the centre of the pan. Using a silicone spatula or the back of a spoon, smooth the mixture out and tease the edges until you have a circle about a hand-span width. Cook for approximately 6-8 minutes then flip over and cook for about 1 minute, the egg free version will cook longer than the eggy version.

I keep the tortilla’s warm in the oven whilst I continue to use up the mixture… this mixture made five 8″ tortillas.
So there you have it, super simple, super tasty tortilla’s…how tasty? I hear you ask! My husband decided to have one of these instead of the other tortilla’s because these looked better…he then announced they even tasted better…and he had gluten-filled tortilla’s on his plate!!!! (ahem – this is the part where you fall off your chair in shock)
