My goodness me that was a mouthful of a title; Gluten Free Chocolate Orange Brownie Flapjacks! What I failed to add was these are also dairy and egg free too so this makes them vegan for any Coeliac that has additional dietary needs.
You can, of course, add cow-juice and eggs if you wish, I’ll let you know how further down (that’s what the handy additional blurb is for guys, to answer any baking questions you have, not to bore you senseless with mundane info about how Gluten Free Chocolate Orange Brownie Flapjacks originated and made all our lives better!)

Why merge a flapjack and brownie?
Why the heck not! I’ve had something similar from a fantastic company that features in my Guide for Gluten Free small businesses that deliver across the UK The Homemade Brownie Company makes loads of different variations of brownie and I came across this flapjack and brownie combo in one of their Broken Brownies & Edges boxes – you have to be quick when they go live as they often sell out in 30mins!
My husband and I were in fits of giggles working out how to name this recipe. We came up with Flappies, Brown-Jacks, and all manner of weird and wonderful names but sadly Google wouldn’t have got the humour and ranked the recipe in their searches hence the very-long-name!
Do you need to bake this flapjack brownie twice?
No. It’s not necessary to bake this twice. I did the trials for you and baking the flapjack first, then both together when you add the brownie topping isn’t necessary, takes extra time and costs more in energy bills so don’t bother. This recipe is a one bake recipe to make all our lives easier.

How to make the flapjack base
The flapjack base is not unlike my No Fail Gluten Free Honey Flapjacks recipe but no honey and smaller quantities. It’s just a simple flapjack base with Gluten Free OATS, dairy free butter, light brown sugar and golden syrup.
Melt the ‘butter’, sugar and syrup in a saucepan then add the OATS and mix well to combine. This is the base for your Gluten Free Chocolate Orange Brownie Flapjacks and you press the mixture into a 20x20cm square tin that’s been lined with baking paper.
NOTE: some Coeliac’s find that they react to avenin which is the protein found in oats, gluten is the protein found in WHEAT, RYE and BARLEY. So even if they are certified gluten free with no cross contamination you may need to check if you’re making these for someone else.
How to make the chocolate orange brownie topping
I’ve just realised I don’t have any brownie recipes on this website to link to! I do have this recipe for Gluten Free Double Chocolate Brownie Dessert which is a cheats version and uses a readymade Gluten Free Brownie Mix so that’s an option if you have one handy?
Anyhoo, this gluten free brownie is made with super simple ingredients
- dairy free chocoalte
- light brown sugar
- dairy free butter
- gluten free self raising flour
- orange juice and zest
- baking powder
- ground flaxseed (to substitute the egg)
As you would with your average brownie tray bake, simply melt the chocolate with the butter and sugar. Add the fresh orange juice and zest and mix in the dry ingredients folding gently (not too much).
How to make these Chocolate Orange Brownie Flapjacks with dairy?
That’s super simple. Not allergic or intolerant to dairy? Well you my friend can add normal butter. Super simple, just swap the same amount for your favourite dairy-filled block of butter.
How to make these Chocolate Orange Brownie Flapjacks with egg?
This is also super simple. Instead of adding a tablespoon (for 9 square recipe) of flaxseed as an egg replacer, just add one egg. You will need to add this to the melted chocolate, butter, sugar and orange juice mixture. As eggs can curdle on contact with heat you will want to allow the melted mixture to cool a little first before adding a beaten egg. Then simply proceed with the remainder of the recipe.
How do you like your brownies – gooey or cakey?
There are many different type of brownie out there. Some are super gooey, others are almost cake-like and some are bordering on tiffin texture! How you like you brownie will depend on how long you will bake these Chocolate Orange Brownie Flapjacks.
Super Gooey Brownies
To make super gooey in the middle brownies you will only need to bake these for 18mins on the temperature set out below in the recipe card. Be warned, this may result in the flapjack base not setting as well as hoped.
Soft Brownies
For a soft brownie topping bake for 20-22 mins
Cake-like Brownies
For cake-like brownies bake for 25mins. This is the time I baked my Brownie Flapjacks for as I am possibly in the minority as someone who isn’t so keen on gooey brownies (I think they taste unbaked and raw!).
Ideas for decorating your Gluten Free Chocolate Orange Brownie Flapjacks
I used loads of additional orange zest but another fantastic idea if you can get your hands on them is to use Buttem!lk’s orange segments, or ASDA orange segments.
NOTE: Terry’s Chocolate Orange is not suitable for Coeliac’s as it is a may contain for WHEAT and many Coeliac’s I know have reacted to them, so it’s not a warning to be sniffed at. However, if you’ve eaten them and feel happy to continue then who am I to judge, just be mindful of the hidden damage that may be occurring. Lecture over!

Gluten Free Chocolate Orange Brownie Flapjacks
Equipment
Ingredients
For the flapjack base
- 250 g gluten free oats
- 60 g dairy free butter
- 60 g light brown sugar brown or granulated are fine too
- 60 g golden syrup (corn syrup)
For the brownie topping
- 80 g dairy free butter
- 80 g light brown sugar brown or granulated are fine too
- 80 g dark dairy free chocolate drops or a block of DF chocolate broken into squares
- 1 small orange juiced and zest removed
- 200 g gluten free self raising flour
- ½ tsp baking powder check for may contains
- 1 tbsp ground flaxseed as an egg replacer [see notes for egg version]
Instructions
To make the flapjack base
- Using a non stick medium saucepan, measure out the 'butter' sugar and golden syrup and gently melt. Stir to prevent burning.
- Remove from the heat once all ingredients have melted and add the GF oats, mix well to combine and set aside to cool for 5 mins whilst you line your square baking tin and prep the ingredients for the brownie topping.
- Once the flapjack mixture has cooled a little, tip into the tin and press down with the back of a spoon or silicone spatula teasing into the edges of the tin.
To make the brownie topping
- Now more onto the brownie topping. In a mixing measure out the chocolate chips, 'butter' and sugar and to save time melt these in the microwave on short blasts of 30secs at a time. NOTE: You can do this in the same sauce pan at the flapjacks but you'll need to melt the butter first then add the chocolate chips and sugar and make sure the chocolate doesn't burn.
- Once the chocolate mixture is melted, add the juice and zest of one small orange, the gluten free flour and the flaxseed and baking powder. Fold all the wet and dry ingredients together.NOTE: if making the egg version see notes.
- Tip the brownie mixture over the flapjack base and smooth to the edges.
- Bake in a preheated oven at 190°C | 170°C fan | 375°F | Gas 518 mins = gooey brownie20-22 mins = soft brownie25+mins = cakey brownie
- Once baked to your liking, remove from the oven and place on a cooling rack, the brownie topping will continue to firm as it cools so don't worry if it wobbles a bit.
- To decorate, add some drizzled melted chocolate and more orange zest as shown or source some chocolate orange segments to decorate each square.
