Good morning, good afternoon and good evening dear reader. This post for Perfectly Simple Gluten Free Picnic Recipes was originally part of a blogger collaboration whereby we joined forced each month and shared each others recipes. It was my turn back in March 2020 originally but sadly this was the same month I lost my darling Gran.
Baking is my happy place, well, that and sitting in my garden. So lockdown had been rather therapeutic to be fair.

Curly’s Chocolate Brownies with Cocoa
Cat from Curlys Cooking often adapts her recipes to be gluten free as she has a friend who is Coeliac. These brownies are not gluten free but Cat reassures her reader that she’s made these successfully with both flour types with the same delicious results. There are also some delicious brownie topping suggestions and the possibilities to pip your brownie are frankly endless.
Kate’s Mini Sausage Pasties
You dont just get an amazing gluten free sausage pasty recipe here, you get an amazing pastry-making master class courtesy of Kates experience at the Adriana Rabinovich Cookery School. Pop the kettle on to read this to brush up on your pastry skills and make your own Sausage Pasties in confidence that this is a tried and tested recipe.
Jennifer’s Chocolate Chip Pancakes
For anyone interested in following a Paleo diet you’ll be sure to want to make these little beauties. Jennifer’s inspiration for this recipe came from a childhood memory of her dad making pancakes and waffles at the weekend. Since her diagnosis of Candida, Jennifer has had to adapt her lifestyle and diet. I think she’s cracked the pancake recipe here. Bit of an odd picnic recipe you may say, but I often take scotch pancakes to picnics and these will be just as delicious wit a bit of free from butter and cold, or push the boat out and add your favourite chocolate spread for the next level of chocolatiness!
Joanna’s Easy Shortbread Recipe
Hands up who doesn’t like shortbread (if you put your hand up then back of the class you – kidding). Joanna’s recipe adds dried raspberries and tops with white chocolate to make the shortbread even more delicious and indulgent.
I happen to know from experience that Joanna’s easy shortbread recipe will work just fine with gluten free plain flour. I would recommend adding a wee bit more butter to bind the crumbs and if you have it a ½ teaspoon of psyllium husk, again to help bind. Failing that xanthan gum or nothing at all, just expect a really short shortbread.

I really like picnics and seem to have stopped doing them in recent years, we sued to have the mall the tie when the kids were young it was great to meet up with other mums. I think this pandemic will have brought back picnics from here onwards. Love your new theme too (hahaha)

GLUTEN FREE SWAPS:
Italian Potato Croquettes – so simple, just switch the plain flour for GF and the breadcrumbs for GF breadcrumbs
Overnight Country Fruit Bread – switch the self raising flour for GF and add a little more liquid to soak the fruit, I’d recommend an additional 50ml as GF flour has a higher absorbency level.

Can I have them all on my picnic? Thank you for guest hosting #CookBlogShare a great round up. Baking (and gardens) are my happy place too. no surprises there. so plenty of baking in lock down for me. Including taking the time to make some rather time intensive cinnamon whirls as well as everyday treats to cheer the family up. And while later in lockdown my allotment kept me busy when sitting in my teeny tiny garden in London I couldnt help missing my much larger garden in Suffolk steadily becoming a rewilding project from neglect.

I think its been a great opportunity to get all those little jobs out of the way, things that you could live with but still niggled away at you…I have probably put on 1/2 a stone with the baking though :-D

Thank you for including my brownies in your round up :) They are definitely very easy to make gluten free and I often do regardless of who is eating them.
Sorry to hear about your Gran. I wouldn’t say I have been baking more than usual – I have lost my willing taste testers since being in lockdown with my husband working from home. But I have baked different things. I’ve been enjoying baking bread (not sourdough).
