Good morning, good afternoon and good evening dear reader. This week is my turn to host the infamous #CookBlogShare round up and recipe linky (for those non-blogger readers I explain what that is below) and this time I’ve chosen Picnic Recipes as my theme. I had been scheduled to host back in March originally but sadly this was the same month I lost my darling Gran.
Lock down has been surreal for me, I imagine everyone reading is feeling the same. I still think that once things go back to ‘normal’ I’ll be able to resume my Wednesday and Friday visits to my Gran’s Care Home. During lockdown I’ve swung from being a hermit sleeping in the daytime when I can to being a full on baking diva! I’ve baked more than is physically possible to eat on some days.
Baking is my happy place, well, that and sitting in my garden. So it’s been rather therapeutic to be fair. I’d love to know what you’ve been baking in lockdown; did you go for the obligatory banana bread in the early days, followed by the sourdough starter craze? I did try the starter and had a great little bubbly starter going but sadly it didn’t reach it’s full potential as the breads I made were flipping awful! Please do comment below to tell me what you’ve successfully baked and make be feel better by adding a failure too!
Now then, onto the round up and linky.
As a general foodie group, the recipes in CookBlogShare aren’t exclusively gluten free but I’ve chosen four recipes today that are perfect for you and I know are easily adaptable if necessary, to meet your dietary requirements. For any recipes that need a tweak I’ve giving tips on how this can be achieved.
What is #CookBlogShare again?
#CookBlogShare is a weekly link party where foodies share recipes, comment on each other’s cooking creations and generally immerse ourselves in the world of gastronomy! If you’ve got a recipe this is the place to show it off!
As mentioned, I have the pleasure of guest hosting this link party this week. The main hosts are; Jacqui at Recipes Made Easy and Leslie and Michelle at Lost in Food and the round ups and linky go live every Tuesday.
If you are new to this link party and wish to join in, please take a few moments to read the guidelines after my recipe shout outs. Joining in with us is very simple and you are welcome to share your old and new recipes (there is no specific theme and all recipes are welcome).
Thank you to everyone who contributed last week and shared their recipes.
So here we go, my picks from last weeks #CookBlogShare
The full post from last week can be seen via this link Summer Recipes but as I mentioned I’ve chosen 4 ideal recipes that double up a picnic recipes. I know you will love to try out for yourself and would act as great foods to take on family and friend social distancing picnics this summer.
Curly’s Chocolate Brownies with Cocoa
Cat from Curly’s Cooking often adapts her recipes to be gluten free as she has a friend who is Coeliac. These brownies are not gluten free but Cat reassures her reader that she’s made these successfully with both flour types with the same delicious results. There are also some delicious brownie topping suggestions and the possibilities to pip your brownie are frankly endless.

Kate’s Mini Sausage Pasties
You don’t just get an amazing gluten free sausage pasty recipe here, you get an amazing pastry-making master class courtesy of Kate’s experience at the Adriana Rabinovich Cookery School. Pop the kettle on to read this to brush up on your pastry skills and make your own Sausage Pasties in confidence that this is a tried and tested recipe.

Jennifer’s Chocolate Chip Pancakes
For anyone interested in following a Paleo diet you’ll be sure to want to make these little beauties. Jennifer’s inspiration for this recipe came from a childhood memory of her dad making pancakes and waffles at the weekend. Since her diagnosis of Candida, Jennifer has had to adapt her lifestyle and diet. I think she’s cracked the pancake recipe here. Bit of an odd picnic recipe you may say, but I often take scotch pancakes to picnics and these will be just as delicious wit a bit of free from butter and cold, or push the boat out and add your favourite chocolate spread for the next level of chocolatiness!

Joanna’s Easy Shortbread Recipe
Hands up who doesn’t like shortbread (if you put your hand up then back of the class you – kidding). Joanna’s recipe adds dried raspberries and tops with white chocolate to make the shortbread even more delicious and indulgent.
I happen to know from experience that Joanna’s easy shortbread recipe will work just fine with gluten free plain flour. I would recommend adding a wee bit more butter to bind the crumbs and if you have it a ½ teaspoon of psyllium husk, again to help bind. Failing that xanthan gum or nothing at all, just expect a really short shortbread.

I have a post that combines more delicious gluten free picnic recipes here National Picnic Week – the gluten free kind everyone can enjoy! Recipes include gluten free banana bread, malt loaf, mocha cake, sausage plaits and rolls and smoothies too.

These are great ideas for a picnic, so tasty and great to have gluten free option.
Well since picnic is the new out-out it seems only right to pimp things up a little bit x
Thanks for putting together these ideas. It’s great to have picnic recipes ready as this is a fun family activity to do this summer, since many gatherings are cancelled.
Exactly, I think Picnics will be back in fashion after 2020, good old simple fun in the sun in a beauty spot surrounded by family and friends.
Thank you for featuring my sausage pasties. They are a favourite here, not least because they are such fun to make…
Just about to link up my latest triumph! xx
They were perfect for the theme and the pastry looks sooooo good! Not surprised they’re a family favourite
Mmmm, love a good picnic and these delights all look scrumptious. We had a picnic last week, first one of the year and it was so good to be eating outside. Love your new theme btw ;)
I really like picnics and seem to have stopped doing them in recent years, we sued to have the mall the tie when the kids were young it was great to meet up with other mums. I think this pandemic will have brought back picnics from here onwards. Love your new theme too (hahaha)
GLUTEN FREE SWAPS:
Italian Potato Croquettes – so simple, just switch the plain flour for GF and the breadcrumbs for GF breadcrumbs
Overnight Country Fruit Bread – switch the self raising flour for GF and add a little more liquid to soak the fruit, I’d recommend an additional 50ml as GF flour has a higher absorbency level.

Can I have them all on my picnic? Thank you for guest hosting #CookBlogShare a great round up. Baking (and gardens) are my happy place too. no surprises there. so plenty of baking in lock down for me. Including taking the time to make some rather time intensive cinnamon whirls as well as everyday treats to cheer the family up. And while later in lockdown my allotment kept me busy when sitting in my teeny tiny garden in London I couldnt help missing my much larger garden in Suffolk steadily becoming a rewilding project from neglect.
I think its been a great opportunity to get all those little jobs out of the way, things that you could live with but still niggled away at you…I have probably put on 1/2 a stone with the baking though :-D
Thank you for including my brownies in your round up :) They are definitely very easy to make gluten free and I often do regardless of who is eating them.
Sorry to hear about your Gran. I wouldn’t say I have been baking more than usual – I have lost my willing taste testers since being in lockdown with my husband working from home. But I have baked different things. I’ve been enjoying baking bread (not sourdough).
I think sourdough and I have agreed to go our separate ways hahahaha
